Re-Purposed Ham – Day Two

On day two of re-purposing my 10 pound ham into new meals, I wasn’t feeling like my usual self, so I sat at the bar in the kitchen and talked my husband through a household favorite. Of course, I rarely use recipes any more. I start with whatever is fresh at the farmer’s market or whatever happens to be in the refrigerator. So… we found some bow tie pasta and a bag of frozen veggies… Broccoli, carrots, zucchini, and squash.

After getting everything cooked, we cut up some ham and threw it all together, adding mayo, Dijon mustard, salt, pepper, and Parmesan cheese to taste. The result was so yummy we all stuffed ourselves. 🙂
I’m thinking day three should include rice…
